What began as a student’s idea on paper has evolved into a fully operational morning coffee shop at Abilene High School, providing students with hands-on business experience while fostering creativity and connection.
Cowboy Coffee was launched two years ago through a partnership between culinary instructor and FCCLA advisor Chris Krenzin and then-senior Brooks Frey, who brought barista experience and technical knowledge to the project. After a brief pause following Frey’s graduation, senior Riley Goodale revived the shop as her senior project through the CEO program.
Reopened in early November, Cowboy Coffee operates each morning before class and is run entirely by students. Goodale oversees daily operations, scheduling, and menu development, including seasonal drinks. The shop operates under FCCLA, with proceeds supporting the club and a scholarship for its student leader.
Krenzin said the program’s greatest value lies in teaching teamwork, responsibility, and real-world business skills while brightening mornings across campus.
