Little Miss B, a bakery/sweet shop in Concordia, opened its doors on April 1st, 2024. The new business is owned and operated by Derrick and Amy Hittle, as well as Skylar and Kourtni Hittle. The letter ‘B’ in the name was inspired by Skylar and Kourtni’s daughter, Brynlee.
While the Hittles own and operate the shop, Brylie Kuhlman is the baker and manager. Her dream of becoming a baker started from a young age. “I learned from my mom and loved watching her make our birthday cakes and different desserts growing up. Eventually, I took over making the cakes and desserts for our family and knew this is what I wanted to do in the future,” she said. Kuhlman went on to study at Kansas State University, where she graduated from the Bakery Science Program. Before meeting the Hittle Family and being offered this position, she worked for the Bakery Research Company.
Kuhlman explained that Little Miss B’s Sweet Shop has two sides. The first is the bakery side, where they have a rotating menu of flavors. Each week, they have 1-2 different types of cupcakes, basic cookies, jumbo/gourmet cookies, brownies, cinnamon rolls or muffins, and soft pretzels. “We also bake any custom orders like sheet cakes, birthday cakes, cupcakes, cookie cakes, and sugar cookies for any occasion.”
Little Miss B’s sells ice cream on the other side. There are always 16 flavors out, but they carry about 40 different types of ice cream in total. There are even dairy-free options. “We also have 2 dairy-free flavors and 2 sorbets, as well as 5 different flavors of smoothies,” Kuhlman said. The shop has recently started carrying freeze-dried candy and is now selling fresh squeezed lemonade with boba and iced tea for the summer.
The shop offers something for everyone. When asked what her favorite item to bake was, Kuhlman answered that it had to be gourmet cookies. “I love getting to come up with new flavors and different combinations for the bakery case each week.”
